Nothing Beats the Aroma of a Healthy Organic Roasted Chicken

Simple Roasted Chicken
1 whole chicken, about 4 pounds
1 medium onion, peeled and thinly sliced
3 tablespoons melted butter or ghee
sea salt and pepper (to taste)
1 tsp. of each of dried thyme, oregano and tarragon
Brush roasting pan with melted butter or ghee. Spread onion slices on bottom of pan. Place chicken upside-down on top of onions and brush with melted butter or ghee and sprinkle with half the sea salt, pepper and herbs. Bake at 375 degrees for 1 hour. Take chicken out of oven and turn so it is right-side-up. Brush with more butter or ghee and sprinkle with more salt, pepper and herbs then return to oven. Bake another hour. The internal temperature should be above 170 degrees F. Once the chicken is ready cover with unbleached parchment paper and then with a towel to keep warm while you make the gravy.
Note: I always encourage everyone to use as much local, grown without chemicals ingredients (organic), and meat, eggs and dairy from animals that were/are free-ranging and were/are raised without hormones and antibiotics. Seafood should be wild from unpolluted waters.
