I decided to name these Kokanee squares (circles)after Kokanee Glacier Park. I can see one of the mountain peaks from my house and it gives me inspiration for many things including my baking.
Below are ingredients, books and kitchen tools that can be used in this recipe and ordered from Amazon:
Put pecans in a food processor and process until very fine.
1/4 cup butter
1 1/2 cups arrowroot powder
2 Tbls. Rapadura or Sucanant (whole cane sugar)
1 tsp. sea salt
1 ½ tsps. Vanilla extract
2 eggs
Add all of the above ingredients to the pecans and process until well blended. Press into a 9” x 13” glass pan and bake at 350 degrees for 15 min.

Second layer:
1 cup butter
2/3 cup honey
¾ cup Rapadura or Sucanant
Place the above ingredients into a pot and melt together on medium heat until it starts to boil. Boil for 5 minutes while stirring and then take off burner.
Add:
5 Tbls. of whipping cream.
Pour this sweet mixture on top of pecan crust and bake again for 20 min.

Third layer:
Right when you take it out of oven, sprinkle with:1 1/2 cups of good bittersweet chocolate chips or cut-up from a bar. I use Dagoba Dollops (see Amazon above)

Let cool completely and cut into squares or use a cookie cutter and cut out into circles.
Note: I always encourage everyone to use as much local, grown without chemicals ingredients (organic), and meat, eggs and dairy from animals that were/are free-ranging and were/are raised without hormones and antibiotics. Seafood should be wild from unpolluted waters.
