Home-made Curry Powder

Recipe: 4-6 dried red chilies or chili flakes 8 Tbls. coriander seeds 4 Tbls. cumin seeds 2 tsp. fenugreek seeds 2 tsp. black mustard seeds 2 tsp. black peppercorns 1 Tbls. ground turmeric 1 tsp. ground ginger Remove the stalks and seeds from the chilies. In a dry cast iron frying pan add all the spices except turmeric and ginger (see photo below). Roast over medium high heat until the spices give off a rich aroma. Stir the spices constantly so they don’t burn. Grind the spices in a coffee grinder (see photo below) or with a mortar and pestle. Add the turmeric and ginger. Keep in an airtight container. This curry powder is used in this stir fry , Coconut Chicken soup, Mulligatawny and you can sprinkle it into rice to add some flavor. Note: I always encourage everyone to use as much local, grown without chemicals ingredients (organic), and meat, eggs and dairy from animals that were/are free-ranging, raised without hormones and antibiotics.
