Coconut Curry Soup to Nourish the Whole Family.

Below are ingredients, books and kitchen tools that can be used in this recipe and ordered form Amazon:

Coconut Curry Soup:

2 onions (chopped)

1 Tablespoon curry powder or make your own curry powder

1 Tablespoon freshly grated ginger

2 carrots, chopped

1 quart of home-made chicken or turkey Stock

1 cup kale or spinach, chopped

1 cup chopped snow peas or frozen peas

1/2 cup chopped red pepper

1 cup meat from roasted chicken or turkey, diced

1-1/2 cups whole coconut cream or milk

juice of 1 lime

Celtic sea salt and pepper, to taste

chopped cilantro (optional)

Saute onions in coconut oil, ghee, chicken fat, or butter for 5 min. add curry, ginger, carrots and sauté another 5 min. Add stock and bring to a boil. Add peas, kale or spinach, red pepper, and chicken and simmer for approx. 10 min. Add coconut milk, lime, salt and pepper and simmer 5 min. more.

I like to serve this Coconut Curry Soup with rice . I put a scoop of rice in a bowl and then ladle the soup over top and sprinkle with fresh cilantro.

Note: I always encourage everyone to use as much local, grown without chemicals ingredients (organic), and meat, eggs and dairy from animals that were/are free-ranging and were/are raised without hormones and antibiotics. Seafood should be wild from unpolluted waters.

when to add spinach?  You listed kale/spinach in the ingredients but did not specify when to toss it in.
